Stomp Apparel Winter Chicken Curry

The colder weather has definitely arrived and there is nothing better than a chicken curry to warm our bellies.

This recipe is lighter in calories as it uses a tomato base but doesn’t lack in flavour with spices such as turmeric, ginger and chilli – and these all have wonderful health benefits.

1 whole chicken chopped into pieces (I like to use whole chicken which has a lot more flavour however you could use chicken thighs if you prefer boneless)

4-5 red chillies (but you can reduce or increase quantity to your desired heat intensity)

1 tablespoon of a good quality curry powder

1 teaspoon of turmeric

1 teaspoon of coriander

¼ cup grated of fresh ginger

1 clove of garlic

1 diced onion

1 teaspoon of coconut oil

800g tin of crushed tomatoes

1 litre chicken or vegetable stock

½ cup fresh coriander leaves for serving


  1. In pot brown onion, garlic and ginger with coconut oil
  2. Add curry powder and remaining spices until brown
  3. Add chicken until brown
  4. Add crushed tomatoes
  5. Add in stock and chilli
Cook for 1 hour or until chicken
