Winter Chicken Curry
The colder weather has definitely arrived and there is nothing better than a chicken curry to warm our bellies.
This recipe is lighter in calories as it uses a tomato base but doesn’t lack in flavour with spices such as turmeric, ginger and chilli – and these all have wonderful health benefits.

Ingredients
1 whole chicken chopped into pieces (I like to use whole chicken which has a lot more flavour however you could use chicken thighs if you prefer boneless)
4-5 red chillies (but you can reduce or increase quantity to your desired heat intensity)
1 tablespoon of a good quality curry powder
1 teaspoon of turmeric
1 teaspoon of coriander
¼ cup grated of fresh ginger
1 clove of garlic
1 diced onion
1 teaspoon of coconut oil
800g tin of crushed tomatoes
1 litre chicken or vegetable stock
½ cup fresh coriander leaves for serving
Method
- In pot brown onion, garlic and ginger with coconut oil
- Add curry powder and remaining spices until brown
- Add chicken until brown
- Add crushed tomatoes
- Add in stock and chilli
