Easy Quinoa Salad
When I was growing up, salads were treated as a side in our family. Nowadays when prepared well they can be a very filling and satisfying meal.
This very simple quinoa salad is so easy and quick to prepare. It has a slight Asian twist to it with a little bit of a ginger & garlic punch – great for immune system in the colder months of the year.

Ingredients
1 cup quinoa
¼ cup soy sauce or tamari
½ cup roasted almonds (can also use other seeds/nuts such as pumpkins seeds, sesame seeds etc.)
½ cup red capsicum (finely chopped)
½ cup sultanas
½ cup spring onion finely chopped
½ cup fresh coriander leaves
Dressing
¼ cup of olive oil
2 tbsp lemon juice
1 clove garlic crushed
1 tsp honey
1 tsp of grated fresh ginger
½ tsp of sesame oil
Method
- Cook quinoa & place in bowl and mix with spring onion and leave to cool
- Add capsicum, sultanas, almonds and coriander
- Add dressing just before serving
